Corn Pudding

Nonstick cooking spray
4 cups fresh uncooked corn, cut off the cob
2 tablespoons red bell pepper, diced
1 cup skim milk
2 egg whites
1 teaspoon lemon juice
1 teaspoon celery seeds

Preheat oven to 350F. Lightly coat a 6-cup casserole with cooking spray and set aside. Mix all the ingredients well in a large bowl. Add more milk if a more pudding like texture is desired. Pour the ingredients into the casserole and bake about 1 hour or until the texture of the pudding is solid and firm.. Makes 4 servings.
